The Preparation

  • 3 tablespoon olive oil
  • 1/2 medium onion, minced
  • 2 teaspoon fresh garlic, minced
  • 1 medium jalapeno pepper, seeded + minced

  • 1 teaspoon cumin
  • 3/4 teaspoon ground coriander
  • 2 tablespoon harissa
  • Salt and pepper to taste
  • 1/2 cup vegetable broth
  • 8 large eggs
  • 1/4 cup fresh parsley, chopped, for garnish
  • 1 teaspoon crushed red pepper flakes, for garnish
