This Gluten Free Fig Frangipane Tart features a fresh figs, an almond filling and pistachios.
Recently, one of my sons wanted to bring in a special treat for the office that he interned at over the summer. A few of the people were gluten-free so I ran to the farmer’s market to see if I could find any gluten-free desserts. Although there are sometimes vendors that sellgluten-free baked goods, none were to be found that day.
So, I made this Gluten Free Fig Frangipane Tart one early morning before my son went to work for his last day. I had made a gluten freeApricot Frangipane Tartfor a friend with two celiac children last summer and they were thrilled to death at the thought of having pastry for dessert. Gluten free cookies and cakes are easier to come by, but I have yet to see gluten free pastry in any bakery. So, when I spotted some fresh figs at the store, I decided to make a gluten free frangipane tart featuring fresh figs.
I used almond paste instead of making the frangipane completely from scratch because I was short on time (see my Apricot Frangipane Tart recipe if you want to make frangipane from scratch). To be honest, it really wouldn’t have been much more work making the frangipane from scratch, so next time, that’s what I’ll do.
Gluten free puff pastry can be found in the freezer section of some Whole Foods. It doesn’t puff up nearly as much as regular puff pastry, but anyone who is gluten-free will be so appreciative if you make them pastry.
First, you roll out the puff pastry to 1/4″ thickness and score a 1/2″ border using a knife.
Then, you spread on some fig jam. Trim the edges so they’re even.
A layer of frangipane is spread on top of the jam, and then fresh fig halves are laid on top.
I brushed some egg wash on top before baking the tarts. Pistachios add a nice contrast in color to the figs. Each box has two sheets of puff pastry, so you can make two tarts.
I trimmed the end pieces for a nicer presentation. Confectioner’s sugar sifted on top adds a nice touch.

Ingredients
- 10ouncesGluten-Free Puff Pastry Sheets2 sheets come in a box
- 1can8 ounces almond paste
- 4 1/2tablespoonsunsalted buttersoftened
- 3tablespoonsalmond flour
- 1 1/2teaspoonslemon zest
- pinchof sea salt
- 3large eggs
- 1/2cupfig jam
- 8fresh figsstemmed and halved
- 1/4cuppistachios
- confectioner's sugaroptional
Instructions
Preheat oven to 375 degrees.
Frangipane
Break up almond paste and place in food processor, along with butter, almond flour, lemon zest, salt and two eggs. Process until smooth.
Fig Tart
Roll one sheet of puff pastry to 1/4 inch thickness. Score a half-inch border around puff pastry. Spread half fig jam on top inside scored border. Spread frangipane on top of fig jam. Arrange fig halves on top of jam. Beat remaining egg with one tablespoon water and brush on top of tart, including the pastry edges. Repeat with second piece of puff pastry.
Bake for 30 minutes; then sprinkle pistachios on top; return to oven and continue baking another 5-10 minutes until filling is set.
Sift some confectioner's sugar on top.
