I've made this many times and the family always loves it. I do add a bit more bacon than the recipe calls for. Easy enough to double if you want lots of left overs.

This had several layers of flavor, starting with the smoked bacon and dark meat chicken. Some of my best recipes are from Cooking Light! It does take a bit of time to make due to several steps but worth it. I may use rotisserie chicken as another reviewer mentioned.

I used a thighs and legs from a cooked rotisserie chicken from the market, a can of cannellini beans, and canned tomatoes for a quick and hearty winter soup. Meets a low-cal target as well. Very tasty and easy.

LOVE THIS SOUP. Had to add extra pepper and also did the slow to boil method, but the vinegar just adds this awesome flavor. The chicken thighs are not to be replaced by any other cut. AMAZING

I love this recipe as it includes a lot of flavorful ingredients. The pasta does soak up the broth but I just add extra broth and a little extra water to help this. I also like mine with a little more vinegar than this calls for and use pancetta instead of bacon. It's a great, hearty meal especially in winter.

In response to some of the commentaries: - Flavor: make sure you added sufficient amounts of black pepper (for "oomph") - The use of left-over soup: Here is how I deal with the aspect of the orzo (or "risoni", if one is using Barilla pasta) soaking up too much liquid when left sitting overnight (and the vinegar evaporating in the re-heating process): In anticipation of the fact that there will be left-over soup I split the serving into two batches: the one for immediate use will have the risoni, beans, and vinegar worked into it; next day, I'd add a sufficient amount of water to the second batch of soup, bring it to a boil and add the risoni/orzo; 8 minutes later (you'll use those to set the table, bring out the bread and prepare the salad), add beans and vinegar - the soup will be comparable to the one served the night before, because the basic flavor (onion, garlic, herbs, bacon, chicken) is preserved, anyways, and the soup won't have a texture that is too thick.

This is one of our favorites in my house! Instead of bacon we use prosciutto and instead of fresh tomatoes we add petite diced in basil and oregano. It helps to add a little more liquid than called for. Use rotisserie chicken breast in a time crunch and it's excellent. We even leave the chicken out sometimes and it's still good. Wonderful. Especially with a sourdough bread for dipping.

Nothing special. Needed something to give it more oomph. Maybe Kale or some other bitter green. Had to add more vinegar and also more pepper. The flavors and texture were just ok. Wouldn't make again.

To me, the flavor in this soup was perfect! When the recipe said to "bring to a boil," I left the pot on medium heat, and let it come to a boil slowly. It seemed to lessen the evaporation. I love the way the orzo soaks up the broth when left to sit. Easy, and only 8 pts!

Made this for dinner tonight and everyone (including my 3-year old and my husband who "doesn't like beans") loved it. The only thing I did differently was to use canned tomatoes instead of fresh, since I didn't have any on hand. My 3-year-old asked to have the leftovers in their lunch box tomorrow, so I know I will be making this again. Edited the next day to add: This was definitely better fresh than as leftovers. The acid from the vinegar is lost and the orzo sucked up much of the broth. It's still very good, but I wouldn't plan to keep any as leftovers when making it again.

This - along with a slice of garlic bread - made for a perfect lunch on a cold, damp day. While some folks might think it's a little bland, it sure hit the spot for my husband and I. Hubby even had more for dinner that evening. As "wifeofthechef" also commented, I boiled off a little too much of the liquid, but adding a small splash of chicken broth solved the problem. Will definitely make again.

Great flavor..Easy to follow and FAST to make! Few ingredients and not complicated at all! The only thing my husband corrected was that I left it on "high" too long (it doesn't mention that in the recipe) and cooked off a lot of the liquid. We added more chicken stock to return it to a "soup." Good flavor even before adding more stock!

Three stars for a good solid recipe. Sorry I can't understand why anyone would think this is worthy of a special occasion or want to seve it to company. Actually, while it is nutritious and filling it is bland, bland, bland. Adding greens, such as kale, as one reviewer suggested would help and I wish I had read that first along with the suggestion to use sausage in place of the bacon which I think was lost in this. It is good enough for my weekday lunch and since it incorporates some of my favorite ingredients I will tweak it next time.

I doubled the recipe and used 3 links of sweet Italian turkey sausage instead of bacon. I also added a bunch of kale, torn into 2-inch pieces, since I had some on hand. I used a can of Italian-seasoned diced tomatoes (drained) instead of the fresh plum tomato. The soup was delicious, and I will definitely make it again.

I love all the ingredients in this soup, and made it exactly as written, but felt it really lacked enough salt. The fresh herbs and vinegar gave it some kick, but it was just a little bland. It's so close to being great, I might try it again with a little italian sausage in lieu of bacon. I know that alters the nutritional values, but it really needs a little kick to bump it up to great.

I thought this was a pretty good soup. I liked the smokey flavor of the bacon and the white wine vinegar added a nice touch. I made it with chopped up rotissarie chicken breast to save some time. This will go into rotation on occassion, but won't become a family favorite.

I really enjoyed the smokiness of the bacon in the broth, and I used a can of diced tomatoes since I had them on hand. It tasted great. I served it with some homemade bread and it made a wonderful dinner.

Good soup! The white wine vinegar adds a nice touch. I didn't have orzo so I used Ditalini pasta and it was great.

An interesting twist on chicken soup. I didn't have fresh oregano so I used dried. I'm sure the fresh herbs would make it better but this was good and I will make it again.
