One of the best things I do to keep weeknight meal prep easy, is to have chicken cooked and frozen. Having the meat ready to go is such a time saver!

If you’ve got leftover turkey, count your blessings! Then package it in plastic freezer bags and stash it away. You can use cooked turkey just like you would chicken.

Lately, I’ve been buying Costco rotisserie chicken to keep in the freezer. But sometimes I cook it myself.

The main thing is to get some cooked chicken or turkey ready for use in recipes. Many of the recipes below are 15 minute meals. Some take a little bit longer, but they’re all easily doable on a busy weeknight.

    Why do you refer to Costco rotisserie chicken? Many of us don’t have a Costco anywhere nearby, but we are beginning to have cooked chicken from other sources. Is Costco a sponsor of yours? Can’t other stores’ chickens be used? Or do you assume that there are Costcos everywhere? Just curious…

      Costco isn’t a sponsor. It’s just what I’ve been using, so that’s what I called the post. I know that not everyone has Costco, so you can substitute rotisserie chicken from other places or cook it at home.

      Costco has the best, biggest, and most lowest priced. These all sound delicious Tiffany! I always get at least 3 meals out of each chicken and like to make broth with the bones and parts I would otherwise just throw away:)

        The rotisserie chickens in the supermarket are small, around 3lbs, a little on the dry side and run about $8 each. Costco’s chicken is sooooo moist and are 5lbs each and cost $5. You can’t beat that price. I noticed Costco now sells lage bags of the leftover chicken cut up. A little more pricey but convenient. I try to get 3-4 chickens, shred the meat and freeze in 1lb bags. Great for chicken salad, soups and enchilladas etc. I then use the bones and carcus for broth to freeze.

          Sam’s are my favorite. They are as big if not bigger than Costco, and I like their flavor over any others. And if you aren’t a Sam’s club member you can get tu he same chicken for the same price at Walmart…

I’m in the same boat as some of the comments up above where the Costco in the title actually caught my eye. We’ve just got one last night and I’ve been looking for ways to make more meals from it!       Since you dont have a Costco, you dont know that they sell their Rotisserie chicken already picked from the bone and stored in a airtight package that lasts for a week in the fridge or can be frozen. It is a real convenience as it is already done that way. Simply take it out of the fridge or freezer and use. IF not, you can use any of yur own cooked chicken or purchase a rotisserie chicken and do the picking yourself. It’s not a sponsor thing for sure..

      Speaking as someone who buys Costco rotisserie chickens, it’s most likely because their chickens are so big and fat, that you probably will have plenty of leftover meat.

      With most of the rotisserie chickens there are no leftovers. Costco has extra large rotisserie chickens. Love them, hoping one day you can experience a Costco rotisserie chicken as well!

    Thanks for the ideas. Never thought about buying the rotisserie chicken and freezing it. Costco is great. We have both a Sam’s and Costco within a half mile of each other. Sam’s parking lot is so bare while Costco is packed. So glad we switched last year

    Here in Lincolnwood, a woodsy suburb of Chicago, we have SAMs Club, Costco,! Traders Joe, Happy Foods, Fresh Farms and Mariano’s. All good places to buy a rotisserie chicken. Each has their own pluses but Mariano’s has a oyster and shrimp bar, a wine and beer bar, a pizza oven, a sushi bar, and an ice cream bar. They have the best bakery and also will season and grill any meats and fish you buy without charge.

        Hi Tiffany, If you live in the midwest, send Mariano’s corporate and ask when a store near you may open. I forgot to include a salad bar, a hot foods bar (hot shrimp, mashed potatoes, stir fry, pot roast, etc), fresh bread area, huge produce section, Kosher food area. Great store to live near, drop in after work, buy a couple steaks or salmon filets, have them cook it in front of you, wrapped and you’re on your way! I am definitely using your idea for rotisserie chicken!!

      Sam’s has great chickens too. I have not found any grocery stores to compare to Sams or Costco for chickens. I guess I am very fortunate to have a Sam’s club and Costco very close to me. When I buy them I usually buy 3 and get a several meals. I never thought to freeze the meat – that is a great idea. One of my kids favorites is buffalo chicken dip.

      If you don’t just jump to the recipes, but read the article, you will see that she says lately she’s been buying Costco chickens but we can use any cooked chickens, even home cooked.

      Thank you for sharing. I live by a Costco and I’ve never been there. Your post plus the positive comments have convinced me to get a membership and see what I’m missing. All of these meals look delightful.

    Preheat oven to 350 degrees.

    Using oven proof fry pan, saute some chopped onions and celery. Add a bag of frozen mixed vegetables. Sauté some more. Add team of chicken soup. Heat through. Pull chicken meat off bones. Add to pot. Heat through again. Season to taste. Top with Pillsbury Grands Biscuits and bake for 17-22 minutes, until biscuits are browned.

    Any greased baking pan can be used instead of a frying pan. I use plenty of filling, and “float” the biscuits on top. The biscuits soak up a lot of the liquid.

      I brought one home yesterday and it was red inside with uncooked meat. This always happens because the chickens are basically jammed onto the skewer and heat cannot circulate between them. Yesterday’s was the worst yet.

    I make my own in my Pampered Chef Stoneware. Thirty minutes in the microwave and I have a chicken that tastes like rotisserie with my choice of seasonings. Not doing an advertisem*nt here. I got a six pound chicken on sale at Kroger for $4.50. We had it last night. Now I will take off the bones and use for some other great meals!

    We have a granddaughter living with us who is on a special diet. She loves chicken and drinking broth so we buy at least one or two Costco rotisserie chickens every week. Not once have they been undercooked. And if we ever did get one, they will honor any complaint and give you your money back if you tell them.

    I prefer Sam’s chicken over Costco. They are better seasoned. My granddaughter that lives with us gets so excited when we buy the chicken. She knows that the next day we will have either chicken and dumplings, chicken noodle soup or chicken tortilla casserole.

    In the SF Bay area most chain grocery stores sell their 28-32 oz rotisserie chicken for $7-8. Costco has their 40 oz for $4.99. I keep my Costco membership basically to get the rotisserie chicken and the gasoline!
